ZUCCHINI SALSA
It’s August and if you have a garden and grow zucchini its about now where you have it coming out of your ears! One plant can produce several! I remember as a teenager I was a live in nanny, the owner had a garden and an incredible green thumb. She had zucchini that were 1 – 2 feet in length! We were giving them away to neighbors, family and friends.
Zucchini is very versatile, has a mild flavor and is heart friendly. Zucchini can help to lower cholestrol as well as blood pressure. Here’s an easy salsa recipe you can make for those summer picnics. It’s vegan friendly and for you raw foodies you can do it raw! ENJOY!
3 Cups Diced Fresh Zucchini
1 Cup Corn (fresh, frozen or canned)
1 Cup Diced Tomatoes (fresh or canned)
1/2 Cup Diced Fresh Bell Pepper (any color)
1/2 Cup Diced Onion
1 TBSP Fresh Cilantro
2 TBSP Olive Oil
1 TBSP Fresh Lime Juice
Salt & Pepper to taste
Place all ingredients in a large bowl and mix thoroughly. Chill for one hour to blend flavors. You can serve this as an appetizer with chips, as a side dish, or serve over a bed of leafy greens for a refreshing and healthy salad.
