

VEGAN 3-BEAN CHILI
Here’s an easy to make, delicious chili to serve on a cold evening. This chili uses 3 different types of beans coupled with sweet corn to create a medley of flavor.
1/2 Large Onion, Chopped
3 TBSP Light Olive Oil
1 Medium Zucchini, quarterd and cut
2 16-oz Cans Diced Tomatoes
1 Large Garlic, Minced
1/4 Cup Chili Powder
1/8 tsp Cayenne
1 16-oz Can Black Beans (Drained)
1 16-oz Can Red Beans (Drained)
1 16-oz Can Pinto Beans (Drained)
1 16-oz Can Sweet Corn (Drained)
Corn Tortilla Chips (Optional)
Avocado (Optional)
Heat a large pan on medium heat, add olive oil and onion. Cook for about 8 minutes until the onions are browned and semi-tender, add zucchini and cook for another 4-6 minutes. Add all other ingredients, mixing thoroughly, cover and turn the heat to low. Sitring occasionally, cook on low heat for 30 – 45 minutes or until the tomatoes have cooked down (no diced tomatoes are visible).
Serve with tortilla chips and diced avocado. ENJOY!
