SWEET POTATO & OATMEAL COOKIES
Here’s a yummy cookie that’s actually good for you! Sweet potatoes are high in vitamin A and the oatmeal is great for the heart. So easy to make, your family will love them.
2 Cups Rolled Old-Fashioned Oats
2/3 Cup Dates
1/4″ Fresh Ginger Root
2/3 Cup Pumpkin Seeds
1/4 Cup Ground Flax Seed
1/4 Cup Coconut Oil
1/4 Cup Honey
1/2 tsp Salt
1 Sweet Potato, cooked
2 Eggs
Pre-heat the oven to 350 and line a baking sheet. In a food processor mix the oats, dates and ginger root until it forms a course meal. Melt the coconut oil and add this plus add all the other ingredients and mix thoroughly.
Using a 1/4 measuring cup, scoop the dough onto a lined cookie sheet and flatten to about 1/4″.
Bake for about 20 minutes or until lightly browned.
Let the cookies cook on the baking sheet. Store in an airtight container in the refrigerator. ENJOY!!
A variation of this recipe is to use apple sauce instead of sweet potato, chopped walnuts instead of pumpkin seeds and raisins instead of dates.
