Spinach Salad

Cool off this summer with this vegan friendly spinach salad that is light, refreshing and delicious!

3 Cups Spinach

1/2 Cup Navy Beans, drained and rinsed

1/4 Cup Lima Beans, drained and rinsed

1/2 Avocado

6 RAW Almonds

6 Dried Tart Cherries

1-2 TBSP Light Olive Oil

Salt and Pepper

Start with the spinach and then add the other ingredients in the order listed, drizzling the light olive oil and then finishing with salt and pepper. Super easy to make, packed with nutrients, vitamins, minerals and protein. ENJOY!
