


2 Carrots – cut in slices
1/2 Onion – chopped
1/2 Yellow Bell Pepper – chopped
1 Cup Spinach or Kale – chopped
1 Can Diced Tomatoes
12 Medium Sized Shrimp
1/2 tsp Cumin
1/2 tsp Salt
1 tsp Basil
1/4 tsp Ground Black Pepper
Cayenne Pepper (option / to taste)
1 TBSP Coconut Oil
Heat a medium sized pan on medium heat, add coconut oil and carrots. Cook for about 2-3 minutes. Add Onion and Bell Pepper and continue cooking for another 3-4 minutes. Add seasonings, tomatoes, spinach/kale and shrimp. Stir until ingredients are mixed well. Cover, turn heat to medium-low and cook for an additional 20 minutes. Enjoy!
