Shrimp Marinara With Zucchini Noodles

Shrimp Marinara with Zucchini NoodlesHealthy, easy to make, delicious and ready to eat in 30 minutes! That’s what you will find when you make this Shrimp Marinara with Zucchini Noodles.


1/2 Chopped Onion

1/2 Chopped Bell Pepper (any color)

1 TBSP Grapeseed Oil

1 TBSP Chopped Garlic

2 – 16 oz Cans Diced Tomato

1 – 6oz Can Tomato Paste

3 TBSP Italian Seasoning

3 TBSP Balsamic Vinegar

8 – oz Shrimp (Peeled and Devained)

2 Cups Chopped Kale (or Spinach)

2 Zucchini – Noodled

Heat a medium pan on medium heat, add the grapeseed oil, onion, bell pepper and saute for about 10 minutes, stirring occassionally. Add garlic, diced tomato, tomato paste Italian seasoning and basalmic vinegar. Mix until well blended, turn heat down to low and simmer for 30 minutes covered. Stir occassionally. While the sauce is cooking, peel and devain the shrimp, chop the kale and noodle the zucchini. After the sauce has simmered for 30 minutes add the shrimp and the kale, cook for about 4 minutes or until the shrimp are cooked. Stir to blend the kale and shrimp into the sauce. Serve over zucchini noodles.  ENJOY!!
