

Super easy to make, this Roasted Corn & Quinoa Salad will spice things up as a side dish or over greens as a meal in itself.
1/2 cup uncooked quinoa
1 cup water
1 tsp corriander
2 tsp gr cumin
2 tsp chili powder
1/2 tsp salt
1/4 tsp gr black pepper
2 cobbs roasted corn
1/2 orange bell pepper, finely chopped
2 TBSP red onion, finely chopped
1 cup lima beans
1 TBSP fresh cilantro, finely chopped
1 TBSP avocado oil
In a small pan add the water and seasonings (corriander, cumin, chili powder, salt and pepper), stir to blend and then add the uncooked quinoa. Bring to a boil, lower heat to simmer, cover and cook for 15 minutes.
While the quinoa is cooking, in a large bowl add the roasted corn, pepper, onion, lima beans and fresh cilantro. Mix until well blended.
After the quinoa is cooked add to the corn mixture with the avocado oil, Mix thoroughly.
You can serve immediately or chill for a few hours. ENJOY!
