ROASTED CHICKPEAS – A HEALTHY SNACK
Here’s a super easy, healthy snack to make and keep on hand. In the summer I put a few handfuls in a plastic ziplock bag and keep them in my purse. That way if I get hungry I’ve got something that’s healthy to hold me over.
2 cans chickpeas, drained and rinsed
1 TBSP olive oil
1 tsp sea salt
1 tsp garlic powder
1 tsp ground cumin
1/4 tsp cayenne pepper (optional)
Preheat the oven to 400°F. Drain and rinse the chickpeas. Place chickpeas on a towel and dry. Take a ziplock bag and add the oil, salt, garlic powder, ground cumin and cayenne pepper, then add the chickpeas and coat throughly. Place onto a large rimmed baking sheet. Bake for 20 minutes at 400°F, then gently roll the chickpeas around in the baking sheet. Bake for another 10 to 20 minutes, until lightly golden.
These work well not only as a snack, but try them on salads – DELISH!! Enjoy!
