
When you think of summer one of the foods that comes to mind is sweet corn. I know some will “poo-poo” and say it’s not good for you, but truth be told, corn has gotten a bad rap. Yes corn syrup and corn oil should not be eaten, but fresh corn baked has many health benefits.
Here’s a super easy recipe that turns out perfect corn on the cob every time.
Simply rub coconut oil on fresh corn on the cob and sprinkle with salt (I use Himalyan). Wrap tightly in aluminum foil and bake at 250 (F) for about 25-30 minutes.

Cooking corn for about 25 minutes (baking is best) significantly elevates the total antioxidant activity by 44% and increases the ferulic acid by 550%
