
Looking for a fluffy pancake recipe that is gluten free and vegan? This will fit the bill.
Ingredients:
1 tsp Chia Seeds
3 TBSP water
3/4 c Almond Milk – unsweetened
1 tsp Vanilla
1 c Gluten-Free Flour
1 TBSP Baking Powder
1/4 tsp Salt
2 TBSP Sugar
In a small bowl mix all the wet ingredients with the chia seeds and let stand for at least 10 minutes.
In a separate bowl mix all the dry ingredients together.
After 10 minutes add the chia seed mixture to the dry ingredients and blend well.
Heat nonstick pan or flattop grill on medium heat. Drop 1/4 cup of the pancake mix, turn over after about 2 minutes. Grill another 2 minutes. Serve with your favorite toppings. ENJOY!!
Makes 6 small or 3 large pancakes.
