Want to make lunch in less than 15 minutes that’s nutritious and delicious? Here’s my On The Go! Easy Salad. High in protein and vegan friendly. ENJOY!
2 Cups Romaine Lettuce, Chopped
1/3 Cup Dark Red Kidney Beans, Rinsed
1/3 Cup Lima Beans, Rinsed
1/3 Cup Navy Beans, Rinsed
5 Olives
2 TBSP Pine Nuts
2 TBSP Sunflower Seeds
2 TBSP Olive Oil
1/4 Fresh Squeezed Lemon
Salt & Pepper to taste
Assemble the salad in the order of the ingredients listed above. Relax, say a prayer of thanksgiving and ENJOY!
