

MOROCCAN LENTIL SOUP
I LOVE lentils, rich in iron, calcium and protein and they take on about any flavor you cook with. The spices in this dish are so fragrant and sweet. You and your family are sure to enjoy this easy recipe you can make in your crockpot. Nutritious and Delicious!
1 large onion, chopped
2 sweet potatoes, chopped
3 cloves garlic, minced
1 head cauliflower, chopped
2 cups lentils
2-16 oz diced tomatoes, canned with juice
2 TBSP tomato paste
1 TBSP olive oil
1 tsp cumin
1 tsp corriander
1 tsp turmeric
1/4 tsp cinnamon
1/4 tsp pepper
6 cups vegetable broth
2 cups water
4 cups fresh spinach or kale, chopped
Lemon wedges
Place all ingredients in large croockpot EXCEPT for the spinach/kale and lemon juice. Cook on high for 5 hours or low for 8. Then add chopped spinach/kale, cover and cook an add’l 15 minutes. Serve with lemon wedges.
