This bean salad is easy to make and is a healthy choice for overall health and vitality. It’s a great addition for your next gathering, gluten free and vegan friendly!
1 15-oz can garbonzo beans, rinsed and drained
1 15-oz can dark red kidney beans, rinsed and drained
1 15-oz can butter beans, rinsed and drained
1/2 small red onion, chopped fine
1 stalk celery, chopped fine
3 garlic cloves, minced
1/4 cup fresh parsley, chopped fine
2 TBSP fresh basil, chopped fine
1 TBSP fresh rosemary, chopped fine
In a large bowl combine all the ingredients listed above.
Dressing:
4 TBSP olive oil
2 TBSP apple cider vinegar
1 TBSP honey
1/2 tsp salt
In a separate bowl whisk together the dressing ingredients.
Add the dressing to the salad and mix gently. Chill for at least one hour, mix again prior to serving. ENJOY!
