Never heard of daal (pronounced “doll”)? Daal is an easy to make, nutritious meal made with lentils. The spices include curry, turmeric, garlic and ginger. Very flavorful, you can make this delicious meal in less than 30 minutes.

2 TBSP Olive Oil

1 Medium Onion, finely chopped

1 1/2 Cups Yellow Lentils

3 Cups Water

1 Vegetable Boullion Cube

1 Can Diced Tomatoes

1 TBSP Fresh Ginger, minced

1 Large Garlic Clove, minced

1 tsp Turmeric

3/4 tsp Coriander Powder

1/2 tsp Salt

1/2 tsp Chili Powder

1 tsp Curry Powder

1/2 tsp Gr. Cumin

Dash of Cayenne Pepper (Optional)

1/4 tsp Black Pepper

3 Cups Water

Cilantro, chopped (for garnish)

In a medium sauce pan heat the oil on medium heat, add the onion and cook until browned. While the onions are cooking, rinse the lentils and set aside.

Once the onions have browned add the water and boullion, cook until the boullion has dissolved. Then add all the other ingredients. Bring to a boil and then turn the heat down to simmer and cook for 15 minutes or until the lentils are soft.

Garnish with cilantro and serve. That’s it — easy peasey right? And wait til you taste this dish! You will love it! ENJOY!
