“All In One” Energy Bars

Energy BarsAfter a student of mine taste tested these bars and I told her what was in them she said, “All in One” .. so that’s what I have named these delicious treats. These bars are a quick, easy snack to make that is far more nutritious than the energy bars you purchase in the store. These not only taste incredible, they are packed with a high amount of protein, fiber, vitamins, minerals and healthy fats.

2 cups rolled oats (gluten-free)

1/2 cup raw almonds

4 dates

1/2 cup sunflower seeds

1/2 cup ground flax seeds

2 scoops vanilla protein powder

2 TBSP psyllium powder

1 tsp salt

3/4 cup tahini (or other nut butter)

1/2 cup agave

1 tsp almond extract

Using a food processor, add 1 cup of the oats, almonds and dates. Blend until the ingredients are chopped finely.

In a medium-sized mixing bowl add the above mixture, the rest of the oats, sunflower seeds, ground flax seeds, protein powder, psyllium powder and salt.

In a separate mixing bowl, blend the tahini, agave and almond extract.

Take the nut butter mixture and add it to the oat/seed mixture and blend until evenly coated.

Line an 9 x 10 pan with parchment paper, scoop the mixture into the pan and press down firmly. Refrigerate for at least 2 hours.

Then remove the entire block from the pan and cut into bars. ENJOY!  These are so yummy — the hardest part of the recipe is waiting the 2 hours before diving in!

This makes 12 large bars or 24 small bars. A small bar only has 100 calories!
