Here’s an easy, quick and yummy salad you can put together in about 10 minutes. Works well as a meal or a side dish for your next picnic outing.
1 cup chopped kale
1 TBSP diced red onion
1 carrot, sliced
1/4 zucchini, sliced and quartered
1/4 yellow or orange bell pepper, cut in 1/2″ cubes
6 olives, halved
1 stalk celery, cut in 1/2″ cubes
1 can chickpeas, drained and rinsed
Place all the above ingredients in a medium size bowl.
Add 1 TBSP avocado oil and coat all the vegetables, then add the following:
1 TBSP Italian seasoning
1 lemon – juiced
salt and pepper to taste
