Creamy Cauliflower Soup

Here’s an easy and delicious soup you can make in about 20 minutes… and to top it off it’s very nutritious.

1 TBSP grapeseed oil

2 medium carrots, chopped

1/4 large onion, chopped

1 head cauliflower, chopped

4 cups vegetable or bone broth

1 tsp curry powder

1/4 tsp gr. ginger

1/4 tsp garlic powder

1 can chickpeas, drained

salt to taste

In a large pan heat the oil on medium, add the carrots, saute’ for about 3 minutes, then add the onion and cook another 3 minutes stiring occassionally.

Add the vegetable/bone broth, cauliflower and all the spices. Turn up the heat and allow the soup to begin to boil, cover, turn down the heat and simmer for 15 minutes.

Place half of the soup in a blender with the drained chickpeas and blend until creamy, place in a large bowl and blend the rest of the soup, place in the large bowl and mix. Serve immediately.  ENJOY!!
