An old standby, straight from my grandmother’s recipe book, here’s an easy to make classic salad.
2 lbs of cucumbers
1 small red onion
1 1/2 TBSP salt
2 TBSP apple cider vinegar
2 tsp sugar
2 tsp dried dill weed
Slice the cucumbers and red onion. In a large bowl cover with cold water and the salt. Let soak for 20 minutes, then drain, rinse with cold water and press all the water out of the vegetables. Place the vegetables in a bowl.
In a small bowl mix the vinegar, sugar and dill until well blended and the sugar is dissolved. Pour the vinegar mixture of the vegetables and stir until coated. ENJOY!
