In a BlendTec Blender or high power blender, add the following ingredients and let stand (DO NOT BLEND) for about 10 minutes, stirring occasionally.
10 oz Ginger
Tea
¼ C Ground Flax Seed
1 TBSP Chia Seeds
Microwave/Bake 1 very large sweet potato, cut in chunks (leave the skin on) and set aside.
Add the following ingredients to the blender:
2 eggs
1/3 C Coconut Oil
1 C Agave
¾ – 1” fr. Ginger Root
2 TBSP Molasses
1 tsp Vanilla
Sweet Potato (with skin)
½ C RAW Pecans
Blend at high speed for 1 – 2 minutes and set aside.
In a large bowl combine the following:
3 C Gluten Free Flour
1 tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
Take the ingredients blended in the blender and add it to the large bowl with the dry ingredients and mix until well blended. Place in muffin tins and put a pecan on top of each muffin.
Bake for 18 minutes at 350. Enjoy!!
