CHIMICHURRI SAUCE
What is Chimichurri Sauce? It is an uncooked sauce traditionally used for grilled meats. It comes in a green version (chimichurri verde) and a red version (chimichurri rojo) and is popular in Argentinian cuisine.
The green version is made with parsley, the red with tomatoes and red bell pepper. The sause also has olive oil, garlic, oregano, vinegar and red pepper flakes.
It not only works well on meats it can also be used as a sauce for many other dishes.
Green Version
- 1 cup light olive oil
- 2 cups fresh parsley leaves
- 3 garlic cloves
- 1/4 cup fresh oregano leaves
- 1/4 cup red wine vinegar
- 1/2 tsp kosher salt (or to taste)
- 1/4 tsp red pepper flakes (or to taste)
- 1/4 tsp ground black pepper (or to taste)
Place all ingredients in a food processor and blend until very smooth. Refrigerate at least 30 minutes prior to serving.
Red Version
- 1 cup light olive oil
- 1 1/2 cup fresh tomatoes
- 1/2 cup red bell pepper
- 3 garlic cloves, minced
- 1/4 cup fresh oregano leaves
- 1/4 cup red wine vinegar
- 1/2 tsp kosher salt (or to taste)
- 1/4 tsp red pepper flakes (or to taste)
- 1/4 tsp ground black pepper (or to taste)
Place all ingredients in a food processor and blend until very smooth. Refrigerate at least 30 minutes prior to serving.
This sauce works well on grilled food such as vegetables, veggie burgers, portabella mushrooms, fish and chicken. Use it as a sauce in wraps, tacos and burritos. ENJOY!!
