Curcumin is an extract of Turmeric. Curcumin may prevent or improve age-related cognitive decline, dementia and mood disorders. A randomized, double-blind trial observed 60 adults ages 60 – 85. After 1 hour of their curcumin dose, the adults enjoyed a higher attention span and better memory than those who swallowed a placebo! After 4 weeks of curcumin supplements, memory, mood, alertness and contentedness were considerably better!
Here’s an easy, quick and delicious recipe using turmeric and cumin.
Chickpea Curry Recipe
2 TBSP Coconut Oil
1 Cup Carrots, sliced
1 Onion, minced
1 Cup Zuchinni, sliced
2 Garlic Cloves, minced
1 TBSP Fresh Ginger, chopped
6 whole Cloves
2 (2 in) sticks Cinnamon, crushed
2 tsp gr. Cumin
1 tsp gr Coriander
1 tsp Cayenne Pepper
1 tsp gr Turmeric
2 cans Chickpeas (drained)
1 Cup Water or Vegetable Broth
Heat large pan on medium heat, add oil and carrots and saute for about 5 minutes, add onions and sauté another 3 minutes, then add zuchinni and saute an additional 3 minutes. Add garlic and all spices and cook for 1 minute blending and mixing well. Add Chickpeas and liquid, blend well and cook for about 5 minutes or until all ingredients are heated. Remove from heat and ENJOY!!
Serve with brown rice and a salad — DELISH!!
