Cauliflower Curry Dish

Cauliflower CurryThis Indian dish includes cancer fighting, immune boosting spices and phytochemicals.  Easy to make, tastes incredible and so healthy for you!

Cauliflower Curry

1 Large Red Onion, chopped

1 Head Cauliflower, cut in 1 inch flowerettes

1 Medium Eggplant, cut in 1 inch cubes

1/2 Red Bell Pepper, cut in 1 inch cubes

4 Carrots, sliced

2 Cups Peas, fresh or frozen

4 TBSP Coconut Oil

1 Cup Water

16 Brazil Nuts

1/2 ” piece of Fresh Ginger

2 Garlic Cloves

1 TBSP Salt

1 tsp Ground Black Pepper

1 and 1/2 TBSP Curry Powder

2 tsp Ground Turmeric Root Powder

1/3 Cup Tomatoes, Chopped

1/8 tsp Cayenne (optional)

1 and 1/2 Cups Coconut Milk (Unsweetened)

Cut all the vegetables and set aside, soaking the eggplant cubes in cold salt water.

After all the vegetables have been cut, heat a large pan on medium heat. Add the coconut oil and the onions and saute’ for about 10 minutes, stirring occassionally.

While the onions are cooking in a BlendTec (or other high power) blender put the water, nuts, all the seasonings (including the ginger and garlic cloves) and tomatoes in the BlendTec and blend on the highest speed for one minute.  This will make a curry paste. Add the curry paste and bell pepper to the onions, turn the heat down to low, mix well to coat all the vegetables, cover and simmer for 10 minutes, stirring occassionally.

Add the carrots, cauliflower, cover and simmer for another 10 minutes.

Add the eggplant cubes, peas and coconut milk. Stir until all ingredients are well blended, cover and simmer for 20 minutes.  ENJOY!
