Black Bean Tacos

This is a super easy recipe you can make in less than 30 minutes. And sneeking some kale into this dish boosts the nutritional value.

1 TSSP coconut or light olive oil

1/2 cup orange or yellow bell pepper, chopped

1/2 cup onion, chopped

2 cups kale, stems removed and chopped

2 (15 oz) cans black beans, drained and rinsed

1/2 cup pumpkin seeds

1 TBSP chili powder

1 tsp gr. cumin

Salt & Pepper to taste

2 avocados, chopped just before serving

In a large skillet over medium heat, add the coconut or olive oil. Add the bell pepper and onion and saute for about 5 minutes. Add the kale, cover and cook for an additional 3 minutes. Then add the black beans, pumpkin seeds, chili powder, cumin, salt and pepper. Blend well and cook covered for 2 – 3 minutes stirring occasionally.

To assemble the tacos, warm the tortilla shells and fill them with kale and black beans, and top with avocado.

This recipe works well with my Chimichurri Sauce. ENJOY!

NOTE: For those who are looking to lose weight, instead of the tortilla shells use the black bean filling for a taco salad, use the chimichurri sauce as a dressing. DELISH!!
